There’s just this thing where one blogger, whoever, has made that announcement, and then people just copy and paste that information from each other. And then there’s this fear—based myth around it. And I don’t think we should be juicing raw kale everyday and be drinking that because some people do that and they do develop a thyroid problem.

But as long as you sautee them or even steam them lightly for three or four minutes, the goiterous properties will go away. You’re actually in really good hands. I always have, in the fridge, different types of dressings that I make myself so it doesn’t get boring. That’s such a super quick and delicious lunch to go. In salads, in soups, stew, how ever you like to prepare them. One tip I want to mention, a lot of times people have a salad base, they will used baby spinach or they will use lettuce. Lettuce, nutritionally, on a scale of nutritional density, lettuce is actually really weak. And there isn’t a lot in it. Drop the lettuce. It’s so tasteless that you need to put a lot of either sugar or stuff in it in order to make the whole salad tasty. Spinach is fine, but then people do it every day, and that’s high in oxalates, and they start having kidney problems.

So rotate your food. Don’t do the same thing everyday. What I would recommend to do is to incorporate some wonderful things like baby arugula, or mixed greens which has got mizuna in it and other green, leafy vegetables. I think it’s a better option than just doing lettuce or spinach.
